Most pro fiction writers I know (and I know quite a few due to having worked on SF convention for 20+ years) build huge backgrounds on their main characters, and 90% of that never gets used. Same goes for the universe they create. It's one of the things that adds depth to their stories. And there are always all sorts of weird things that never make it into the story, but influence how the character and events unfold and interact.
As for why Rowling let this fact out now? Because she can? Given a chance, how many pagans would jump at the chance to tweak the nose of fundies?
